素食料理 - Vegetarian dishes

芹菜蘆筍蕃茄 -  Celery, asparagus, tomatoes

 

烹飪對有些人很療癒,

對我來說是緊張和壓力。


然而自從茹素後,

感覺能夠很輕鬆自在的進入廚房。

以愉快的心情研究素食料理。


我做的青豆濃湯

加入幾片碗豆莢⋯

猶如在綠湖泛輕舟。


還有

纖柔的芹菜環繞脆香的蘆筍,

葉片飄落在小番茄上,

彷彿裡面藏著一首詩。


其實我最喜歡的還是青菜豆腐類

簡單樸實的料理。

但偶爾花點心思作些特別的料理,

倒也增添不少生活的創意與樂趣。


Cooking is very healing for some people.

It's nervous and stressful for me.

However, since I became a vegetarian, 

I feel that I can enter the kitchen very easily.

And research and develop vegetarian food with a happy mood.


The green bean soup I made -

Add a few slices of bean pods...

It's like a light boat on a green lake.


And delicate celery surrounds crispy and fragrant asparagus.

The leaves fell on the small tomatoes,

It seems that there is a poem hidden in it.


In fact, my favorite is the simple 

and unpretentious dishes of 

green vegetables and tofu.

But occasionally spend some time to make some special dishes,

it also adds a lot of creativity and 

so much pleasure.

20年前某一天,

來到萬華專門供應餐廳行業需的

販賣店,

將購買的鳥、魚和烏龜

放入通風紙盒與水箱,

送往烏來寺廟的山林。

看著眾鳥林中飛翔

與湖水中自在游動的眾生⋯

莫名的法喜充滿內心。

當下決定從此茹素。


學佛修行、茹素

改變了我的人生。

感受慈悲的法喜。

生活各方面也較有自我克制力。

不再苛求完美、計較得失。

漸能伏住煩惱。

以平常心看待悲歡離合、生老病死。


動物與植物的不同在於 -

動物是有情眾生

能感受生老病死之痛。

有情識 - 喜、怒、哀、樂、

分別、執著、嗔恨。


植物是無情眾生

雖有觸覺,

然而沒有分別、執著、嗔恨

的情緒。


茹素是不忍食眾生肉,

但必須進食以維持身體所需,

所以我們在吃素時

感恩植物的供養。


有些人改變飲食習慣實行吃素後,

礙於口味的喜好與對素食營養的存疑 

( 擔心缺乏蛋白質 或是飲食不均衡⋯ )

以致於身體不適時即失去信心,

無法堅持素食。


我們知道,肉類的酵素會因加熱遭破壞,

須由人體自己產生酵素消化。

況且肉類在大小腸內停留時間

長達60至100小時才能消化,

在此其間,肉類已在腸道腐敗產生病菌。

而肉食者攝取的蛋白質過多的會轉變為熱量,

也會變成脂肪積在體內。


粗茶淡飯、五穀雜糧、

根菜蔬果都是有益健康的天然美食。

素食要注意的是少吃加工、醃過的食品。

其中加有化學、防腐劑會危害身體,

大部份營養也遭破壞。


以慈悲心力行素食,

依照正確養生資訊,

起居飲食正常均衡,

必將擁有健康的素食人生。


One day in my life ( 20 years ago )

I went to Wanhua to specialise in serving the needs of the restaurant industry sales store,

birds, fishes and turtles to be purchased.

Put in the ventilation cardboard box and water tank,

sent to the mountains and forests of Wulai Temple.

Watching the birds fly in the forest,

and all sentient beings swimming freely in the lake…

The inexplicably happy filled my heart.

At that time, I decided to be a vegetarian.


Learning Buddhism and becoming a vegetarian changed my life.

Feel the joy of compassion.

There is also self-restraint in all aspects of life.

No longer demand perfection or care about gains and losses.

Gradually be able to rely on to worry.

Look at the separation of sadness and joy, life, old age, sickness and death with a normal mind.


The difference between animals and plants lies in -

Animals are sentient beings.

Can feel the pain of life, old age, sickness and death.

Affection - 

joy, anger, sadness, 

discriminating thought, persistence, hatred.


Plants are ruthless beings.

Although there is a sense of touch,

however, there is no emotion of discriminating thought, persistence and hatred.


Vegetarians can't bear to eat sentient beings.

But  must eat to maintain their body's needs.

So when we are vegetarian

be grateful for the support of plants.


After some people change their eating habits and become vegetarian,

due to taste preferences and doubts about vegetarian nutrition

( Worried about lack of protein or unbalanced diet...)

So that they will lose confidence when their  body is not feeling well,

Can't stick to vegetarianism.


We know what the enzymes of meat will be destroyed by heating. 

It must be digested by the human body itself.

Moreover, the residence time of meat in the large and small intestines

It can be digested for up to 

60 to 100 hours.

In the meantime, the meat has been spoiled in the intestines

and produce germs.

And ingesting too much protein will turn into calories.

It will also become fat accumulated in the body. 


Simple meals,

whole grains, root vegetables

and fruits

are all natural delicacies that are beneficial to health.

Vegetarians should pay attention to eating less processed food and 

pickled food.


The addition of chemicals and preservatives will be harmful to the body, and most of the nutrients will also be destroyed. 


Compassion-motivated vegetarianism,

according to the correct health information,

live and have a normal and balanced diet,

will definitely have a healthy vegetarian life.

觀世音菩薩

是阿彌陀佛西方淨土中的大菩薩,

《無量壽經》記載觀世音菩薩

與大勢至菩薩

同為西方極樂淨土中阿彌陀佛的

左右脇侍菩薩。


「 觀世音菩薩

觀一切眾生,聽一切苦難,

隨因緣化身度一切眾生 」

源於<< 妙法蓮華經

觀世音菩薩普門品 >> 

也有經典記載觀世音菩薩

在過去無量劫中

早已究竟成佛,

名號「 正法明如來 」

因其大悲願力所發菩提心,

為度一切眾生, 

以菩薩示現,乘願而來,

觀察眾生音聲救度苦難。


Guanyin Bodhisattva 

is the great Bodhisattva of Amitabha Buddha in the Western Pure Land

The Immeasurable Life Sutra records Guanyin Bodhisattva and Dashizhi Bodhisattva are  the left and right Bodhisattva of Amitabha Buddha 

in the Pure Land of Bliss in the West.


“ Guanyin Bodhisattva observes all living beings and listens to all suffering. 

Incarnates all sentient beings according to 

causes and conditions. “

The original texts come from 

<< The Lotus Sutra’s Universal Gâté Chapter on Avalokitesvara Bodhisattva >> 

There are also scripture records

that Guanyin Bodhisattva has become a Buddha already,

but rather to manifest as a Bodhisattva 

with great compassion 

to retune our world again for helping 

all beings.
